Do you think the term “Server Productivity” an oxymoron? Well, not for long! With a little help from Positouch, you can turn the tables on your oxymorons, and increase productivity while adding vital sales focus. This powerful posi feature will actually make you money! Vince Bogan, our Project Manager, examines this subject in the second of our three-part series.



Server Productivity

In the foregoing discussion, we listed the results you can achieve. In addition, we also would show you how to:

Track appetizers to build incremental sales

Track cappuccino & espresso sales to increase check averages

Track desserts, again to increase server productivity but also to make sure they are being sold and not walking out the back door.

Track the POSi-tini – Manhattan 's new drink sensation.

Step 1: Gathering Information

What do you want to track? Be specific! Too much information will blur the focus you are trying to achieve.

For demonstration purposes we will track the following:

1: Appetizers – to build incremental sales.

2: Specialty Desserts – to see if the shi-shi new items are selling or

walking.

3: The Posi-tini – Manhattan 's new drink sensation.

First you need to know the Major and Minor Categories and inventory numbers.

Go to “Back Office Setup>Menu Item Categories”

Make a note of the Major Category you will be tracking. For our example we will use “3” for Appetizers and “7” for Desserts.

To get the number for Minor Category simply click on its Major Category and select “Add/Change” this will show a list of Minor Categories by number.

To get the “Inventory Number” for an item, go to “Menu Items>Edit an Order Screen,” find the screen and the button of the item you want to track and copy down the “Inv#” from the box in the top left corner of the “Button Screen.” (Our Posi-tini's Inv# is 1250)

With that information in hand we'll move on to Step 2: The Set-Up.

Step 2: The Set-Up

Go to “Back Office Setup>Reports>Server Productivity”

Select “Edit Categories”

Please note the commands on the right side of the box. Today we will be using “Add” only but as you begin to work with this feature you will become familiar with the other self explanatory commands.

Select “Add”

Fill in the “Category Name” in the space provided.

Select a “Search Field Number”

1 = Major: To track by Major Category (Appetizers)

2 = Major/Minor: To track by Minor Category (Spec Desserts)

3 = Screen: To track by screen (not used in this example)

4 = Inventory Number: To track by item (Posi-tini)

Select “Add Field,” then enter the corresponding information in a 5 digit format.

Our Major Category for Appetizers is 3, we will enter it as 00003.

Our Major Category for Desserts is 7 and the Minor Category for 3, we will enter 00703.

Our Inventory Number for the Posi-tini is 1250, we will enter 01250.

When you are done, your screen looks like Fig. 4, if so select “Save.”

After selecting “Save,” select your tracking option. In this demo we will be selecting “Percent of Sales” then click “Save.”

**If you want Server Productivity to print on your server's Cash-out Reports YOU MUST MIRROR THE ABOVE SET-UP IN “Back Office Setup>Reports>Flash Report!**

Step 3: Reports

Front of House Cash-Out Reports:

When doing a Cash-Out Report the Server, Bartender or Manager must select “Category Sales” before touching the “Red Button” weather it be “SELF,” “OF THIS SHIFT,” or “ENTIRE DAY,” depending on the configuration of your system.

This should result in a section on the Cash-Out Report like the one in fig. 7.

Back of House – Server Productivity Reports.

Go to “Reports and Batches>Server Productivity”

Server Productivity Reports can be sorted alphabetically, by Total Sales, by Category Sales, or by Percent of Sales depending on your needs.

Select “Entire Day” or run report by shift,

then select the time period you are tracking.
